Before we became as health conscious as we are today, this pan was sold as a "chicken fryer". Indeed, someday, Im going to use this pan to fry some chicken or fish. Think of this pan as the pan that is taller than a skillet, but shorter than your dutch oven. Lodge used to sell this with a cast iron lid (beter for braising, but the "look inside" feature of the glass lids is nice). A major problem with making stir-fry at home is that residential stoves don't have put out enough heat energy (BTU's) to adequately heat a carbon steel wok enough to hit the stir-fry with enough heat to do the "fry" part of stir-fry. Instead the addition of each ingredient cools the temperature of the wok down to where it more steams the food instead... It's everything you expect out of a cast iron skillet, as long as you season it properly you won't have any problems. The lid fits well although the circular handle comes loose sometimes so you need to tighten it, not a big deal. My wife hates using it because it's so heavy, so I wouldn't recommend it for every day cooking. |
